DINNING: all of Greece variety of foods and drink can
be found in the many cafes and restaurants of Athens. If it is psaria (fish),
kalamara (squid) or maybe tsoutsoukakia (meat balls in tomato sauce) or maybe
the traditional fast food gyro (meat, tomatoes, cream sauce all wrapped in a
peta bread) you will find them all in Athens. (see other dishes below).

VILLAGE SALAD
(Horiatiki Salata)
Wash tomatoes and cut them along with onion
into
bowl. Mix with cheese and olives.
Combine salt, pepper, olive oil, oregano and
pour
over salad. Serve cold.

SKEWERED LAMB ON
SPIT
(Souvlakia)
Push meat on skewer alternating with small
pieces
of tomato, onion. Season
meat
with marinate mixture.
Grill over
a charcoal
fire or
under broiler.
Continue
to baste with marinate mixture and ad-
ditional
lemon juice.
Serve hot with rice pilaff and a salad.

(Tzatziki)
Served as dip for vegetables, bread, crackers
or chips.
